Is it correct to capitalize the word Kosher?

Is it correct to capitalize the word Kosher in a sentence? If I were writing, "I like Kosher food," is the K capitalized in Kosher? I think it is, but I see places where it is not, so now I'm confused. Thank you for the help. I want to be proper!
